All you need is a couple of ingredients to turn your instant ramen into the tastiest spicy Korean noodles.

We’re using shin ramen – specifically Nongshim Neoguri ramyun- because they’re nice and thick. But you could use any type of instant noodles at all.

And our magic ingredients are gochujang and kimchi, both of which put the Korean into our spicy Korean noodles. They also add great complexity and depth, and are an easy way to upgrade your instant noodles.

Other ways to make instant ramen better

Instant ramen hacks are brilliant in the flexibility. Basically you can add whatever you like to your instant noodles, so have fun and experiment.

For my spicy Korean noodle recipe I use gochujang and kimchi to add heat and depth,and garlic and ginger for fragrance. Then at the end of the cook I stir in an egg yolk for a richness. So it’s sort of like an Asian carbonara!

But there are so many other ways to hack your instant ramen.

For instance love the idea of adding other Asian spices, like Gocharu (a Korean chilli powder). Take it to the next level of spiciness with a drizzle of Sriracha. Now you’re talking.

Of course you could also add meat for extra oomph, maybe some sausage or a leftover roast from the weekend.

And if you feel like a veggie noodle bowl instead, why not play around with some fried tofu and crunchy beancurd? Yum.

Or maybe you could play with a Japanese instant noodle concept instead of Korean noodles. That could mean katsuobushi and nori, and maybe some wakame on the side.

And that’s just the start of how you could upgrade your instant ramen.

Equipment

  • 1 saucepan
  • 1 Grater

Ingredients
  

  • 1 pack instant noodles
  • 1 tbsp Gochujang
  • 1 tbsp sesame oil
  • 1 clove garlic
  • 1 inch ginger (fresh or frozen)
  • 1 spring onion
  • 1 egg yolk
  • 1 tbsp sesame seeds
  • 3 tbsp kimchi

Instructions
 

  • Add sesame oil to a saucepan on medium heat.
  • Grate in garlic and either fresh or frozen ginger.
  • Add instant noodles and 400ml boiling water.
  • Stir in a quarter pack of the instant noodle seasoning that comes in the pack. This will be your soup base, but don't add all of it because the other ingredients will finish your noodles off.
  • Cook on medium heat until water reduces (roughly 8 minutes).
  • When there is only a little water left in the pan and the noodles are tender, add gochujang paste.
  • Take saucepan off heat and quickly stir in egg yolk.
  • Add as much kimchi as you like and sprinkle chopped spring onions.
  • Finish with a sprinkle of sesame seeds and enjoy!
